Meet the Bristol Brewers: Wiper and True

Bristol is home to a growing crop of dedicated, creative and fiercely independent breweries in 2021, each offering their own combinations of innovative creations and unique twists on age-old classics.

 

From the city's extensive selection of craft pubs, taprooms and pop-ups to the huge buzz around the annual Craft Beer Festival, it's no secret that Bristol loves its beer, making it the perfect home to breweries of all shapes and sizes.

 

In the second edition of our Meet the Bristol Brewers series, we shine a light on Wiper and True, a small but mighty team of dedicated craft beer connoisseurs operating out of St Werburgh's.

Having started out as a completely DIY home-brewing project based around tinkering, guesswork and a lot of early research, Wiper and True is a real example of a quality, independent brewery built from the ground up. 

 

Founder Michael Wiper spent a long time in his early years as a brewer learning from like-minded people up and down the country, honing his craft through trial and error with the input of a wide range of artisan producers.

 

Wiper and True's first brewery opened in St Werburgh's in 2015, which is now one of two production sites in BS2. The other, opened just last year, is located just around the corner from their York Street HQ, on nearby Merstham Road.

The hard-working team at Wiper and True constantly refine and innovate their recipes, striving to deliver an ever-evolving, perfect pour across their full range. 

 

Despite the challenges posed by the coronavirus pandemic, and the extended closure of their two immensely popular taproom sites, the brewers are continuing to produce an array of top-notch beers to be distributed across Bristol and beyond.

 

Alongside classic Pale Ales, Stouts and Lagers, Wiper and True regularly experiment with barrel-aged and mixed-fermentation beers, offering an ever-changing selection year-round.
